Baby Arugula and Whole Grain Salad

Ingredients:

2-3 cups Baby Arugula or Spinach or other Leafy Green

1 cup sliced cherry tomatoes

½ cup chopped red pepper

¼ to ½ cup chopped red onion

¼ cup sliced black olives

¼ cup feta cheese

1 1/2 cups cooked grain (pasta, couscous, bulgur or quinoa)

*Optional ¼ roasted pistachios or toasted pine nuts

Olive oil and vinegar to taste

Salt and Pepper to Taste

Instructions: Cook grain according to package directions. Combine vegetables, olives, feta, oil and vinegar and salt and pepper in large serving bowl and toss. Set aside. When grain cool, add to salad and toss. Add additional olive oil and salt, if needed. Serve immediately.

Makes two large servings.
