Shrimp Tacos with Creamy Cilantro Sauce
Love shrimp? So do we! Here’s a great recipe for tacos-done-healthy (and delicious of course!) Feel free to get creative with this dish and add more veggies to suit your taste. I love them with red and green peppers added.
1 lb shrimp (peeled and deveined)
2 cups shredded green cabbage
8 corn or whole wheat tortillas
fresh cilantro (for garnish)
1 tbsp olive oil
1 tbsp smokey chipotle powder
Pinch salt and pepper
Creamy Cilantro Dressing
1/4 cup low fat mayo
3/4 cup non fat greek yogurt
1/2 cup fresh cilantro
Juice of 1 lime
In a small bowl combine olive oil and chipotle powder. Add shrimp and chill 10-15 minutes. Meanwhile, shred cabbage and make cilantro dressing. Place tortillas on a baking sheet to be warmed in the oven. Put shrimp on a skewer and grill (or on a baking sheet and broil) until shrimp turn pink, approximately 8-10 minutes. Assemble tacos with shrimp, shredded cabbage, veggies to suit your taste, and cilantro. Pour dressing over tacos and enjoy!
