Using high-quality, intensely-flavored foods is a smart way to add oomph to recipes. Why? They perk up flavor in the finished dish, of course, but also because you can use less of them because they’re more flavorful.  Sun-dried tomatoes (as well as things like olives and Parmigiano-Regianno cheese) are perfect examples of this concept. And in the case of sun-dried tomatoes, there is the lycopene bonus—the fact that they’re dried concentrates their beneficial phytochemical called lycopene to levels that are much, much higher than fresh tomatoes.  Here’s one of our favorite Bella San Luci recipes, a Mediterranean Salmon Pasta dish.

Bella Sun Luci products are produced by Mooney Farms, a California-based, family company with a core business focused on quality Mediterranean foods. Mooney Farms sent me a generous sample box of their sun-dried tomato products, and I was thrilled with the quality and variety. They sent along some recipes, but I ended up just adding the tomatoes to my own dishes, with fabulous results. I especially loved how soft the tomatoes were—unlike some sun-dried tomatoes that come out of the package practically petrified. And finding that I have plenty of wonderful sun-dried tomato products on my pantry shelf makes me feel very “chefy” (just ask my daughter, who likes to narrate while I cook, as if we’re on our own Food Network show.     I like sundried tomatoes on pizza. My favorite has an olive oil base, crushed garlic, a heap of spinach, sundried tomatoes, feta, pine nuts, mozzarella and fresh basil.

    I love sun-dried tomatoes in salads and in risottos! But yesterday we used in a ravioli dish, we made the pasta dough and blended in sun-dried tomatoes in the dough itself, then I used some chopped sun-dried tomatoes in the filling as well with ricotta and herbs. It was such a delicious homemade pasta.
    I never had Bella Sun Luci sun-dried tomatoes, but you can be sure that me and my family would love to try it!

    I will be honest I am not sure what my favorite way to use sun dried tomatoes. I’ve always wanted to use them in recipes but haven’t.     Always have sun-dried tomatoes on hand for antipasto platters and a throw in flavor for many of my dishes! My favorite is a sun-dried tomato, feta, greek olive and oregano pasta dish only these days it’s a gluten free pasta!

    My favorite way to use sundried tomatoes is in a recipe I make for Chicken bistro salad. It includes penne pasta, feta, sundried tomatoes, cherry tomatoes, chicken, and italian dressing and is quite yummy!     I love them in my pesto sauce, tossed into scrammbled eggs, top bruschetta with fresh mozzarella, sun-dried tomatoes and balsamic vinegar , tossed in a salad. Just get creative.

    I like to use your tomatoes in a dish that includes: basil, tomato, pesto, orzo, spinach and cherry tomatoes. Cooked with fish and topped with feta cheese and a splash of white wine with garlic. I even have my picky sister in law eating them in salads and pasta. They are also good in scrambled eggs, and the oil is good on grilled cheese sandwiches instead of butter, or even in homemade blue cheese dip, the possibilities are endless. So please keep making your fantastic products and I will keep thinking of great ways to use them.

    I love to make grilled mahi mahi fish with julien sweet onions, sprouts, cubed tomatoes, wasabi cream sauce, soy sauce and hot sauce a touch of cilantro and place into Tortillia Factory wraps…delicious.

    I adore sun-ripe tomatoes! I used to make my own from ones I grew, but they never turned out that great, not sure what I was doing wrong… lol

    They are fantastic in salads, dressings, as a snack to eat by itself, in dishes with rice/veggies, pasta dishes that I make, etc. just LOVE em!
