Were you one of the foodie Appetite for Health readers who submitted a recipe idea along with your entry to the Pear Giveaway we posted last week? If so, you might have won special sur-prize!
Thanks to all who entered the Springtime Pear Giveaway last week—you guys blew us away with your ideas for dehydrating pears, making pear honey, adding pears to oatmeal concoctions (even for cooking over a fire!) and all the yummy dessert ideas.
In fact, we were so impressed with the recipes and ideas that our loyal AFH readers submitted, that we thought you should be rewarded for your culinary creativity.
So, USA Pears has worked with us to create a special Pear SurPrize pack, featuring some great kitchen gadgets and goodies (like a pear slicer, cutting board and cute pear tea towels, etc).
How cool is that?!
Thank you, USA Pears!
And now for the big reveal. The winner of our Pear Sur-Prize package is…(oh, the suspense!)…WILLIAM GUZMAN!!!
Congratulations! The Roquefort Pear Salad recipe you posted sounds delish to us, and we want to share it with everyone.
Roquefort Pear Salad
1/4 cup white sugar
1/2 cup pecans
1/3 cup olive oil
3 tablespoons red wine vinegar
1 1/2 teaspoons white sugar
1 1/2 teaspoons prepared mustard
1 clove garlic, chopped
1/2 teaspoon salt
fresh ground black pepper to taste
1 head leaf lettuce, torn into bite-size pieces
3 pears – peeled, cored and chopped
5 ounces Roquefort cheese, crumbled
1 avocado – peeled, pitted, and diced
1/2 cup thinly sliced green onions
1) In a skillet over medium heat, stir 1/4 cup of sugar together with the pecans. Continue stirring gently until sugar has melted and caramelized the pecans. Carefully transfer nuts onto waxed paper. Allow to cool, then break into pieces.
2) For the dressing, blend oil, vinegar, 1 1/2 teaspoons sugar, mustard, chopped garlic, salt, and pepper.
3) In a large serving bowl, layer lettuce, pears, blue cheese, avocado, and green onions. Pour dressing over salad, sprinkle with pecans, and serve.
