What to Eat in Paradise…

So, I just returned from a brief holiday that can be summed up in one word: ridiculous. One of my good friends (whom I will refer to hereafter as “My New Best Friend Ever”) managed to swing a great deal on a spectacular villa in Cabo San Lucas, Mexico. As one of the lucky invitees, I was able to spend four days relaxing, reading, swimming… and basically doing a whole lot of absolutely nothing. I specialize in staring out into the ocean, with no particular thoughts in mind….

Our house had a beautiful kitchen and we were able to stock up on a lot of our favorite foods and snacks. As I may have mentioned in previous posts, I’m not a ‘big meal’ eater. I prefer to have small meals and snacks throughout the day. Snacks included yogurt, fresh fruit (pineapple, apples, bananas, watermelon, cantaloupe, strawberries, and blueberries) guacamole and chips (of course!!), whole grain cereal, and veggies and ranch dip. I would like to say that the fresh fruit was the house favorite… but in reality it was the guac and chips.

Good news though, guacamole is a very healthy snack. Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. They also act as a “nutrient booster” by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit. Just make sure you have guac in moderation…. about 1/5 of an avocado has about 50 calories. So 1/4 cup of guac is a reasonable snack portion. For chips, we had “Cabo Chips”, which I’d never tried before. They are regular tortilla chips… but probably the best ones I’ve ever had. (Yes, I know I may have been influenced by the warm ocean breeze, relaxing massage, lack of work stress, etc. But really, they were great chips!!)

One of the many highlights of the trip — food-wise anyway — was our chef. We had someone come over to make breakfast one morning. I told you this trip was ridiculous! She made omelets and waffles. I should have asked her for the waffle recipe because they were amazing. She put whole bananas into the batter and wow! — they were good!

I could go on and on about how fun this trip was… but I don’t want to receive any hate mail. (Don’t be jealous, I’m back in NY now, where it is cold, dark and rainy.) I will mention one more thing however…. If you happen to marry a billionaire, win the lottery, or are Oprah Winfrey, make it a point to visit The One & Only Resort at Pamilla in Los Cabos. This place was just next door to us and we went one evening for dinner. Absolutely one of the most beautiful places I’ve ever visited.

    It sounds too good to be true, but I’m looking at the picture, I’m tasting the chips and I’m ready to go – oh, the invitation?
