Love Mexican food? Me too! It can be a little tricky to have a genuinely healthful meal at most fast-food Mexican restaurants however. Even if items are lower in calories and saturated fat, many tend to be high in sodium. I have some good news though. You can save money, have a healthy Mexican-based dish, and still get fabulous taste. Oh, and best of all, it only takes a few minutes. I grill up some skinless chicken breast, saute onions and peppers, drain a can of black beans, chop a few tomatoes and a slice of avocado, and spoon out a dollop of fat free sour cream. Seriously, this takes less than 20 min.
All that’s left to do is take a few warm whole wheat tortillas and roll-up the ingredients! I usually have about 2-3 (not over-stuffed) tortillas as my portion size. This is a very satisfying meal. It’s also a nutritional powerhouse. You get lot’s of fiber and b vitamins from the beans and whole wheat tortilla, healthy fats from the avo, lean protein from the chicken, vitamin C from tomatoes, and many other nutrients.
I use the leftovers to make a great lunch salad the next day. You can also spice up your ingredients however you like. My sister loves to add hot chilis, my friends add spicy salsa, and you can also add different types of beans and veggies. Sometimes I use grilled shrimp in place of chicken too. Yummy!!
